We’ll be serving up our favorite chocolate treat – chocolate chip cookie dough truffles – and Moscato d’Asti. These truffles look so fancy, but are so simple to make. So I thought I’d share the recipe with y’all. I typically only make these at Christmas time…because I will eat every last one…they are so yummy! So you better get on down here tonight and save me from the pudge that is sure to follow if I’m forced to devour them myself.
Chocolate Chip Cookie Dough Truffles
Ingredients:
1/3 c. Butter, softened
1/3 cup Brown Sugar, packed
1 Tbs. Vanilla
1 c. All Purpose Flour
1 c. Miniature Semi-Sweet Chocolate Chips
4 oz. Dark Chocolate Chips
4 oz. Chocolate Candy Coating (like almond bark), chopped
1 Tbs. Shortening (like Crisco)
Directions:
Line a 15x10x1-inch baking pan with waxed paper; set aside. In a medium bowl beat butter, brown sugar, and vanilla with an electric mixer on medium speed until combined. Beat in flour just until combined. Stir in chocolate pieces. Shape dough into 1-inch balls. Place on prepared baking pan. Cover; freeze about 30 minutes or until firm.
Meanwhile, in a small saucepan heat chopped chocolate, candy coating, and shortening over low heat, stirring until until melted and smooth. Remove from heat. (I transfer my chocolate to a small crockpot to keep it a smooth consistency.)
Line a baking sheet with waxed paper. Using a fork, dip balls into chocolate mixture, allowing excess chocolate mixture to drip back into saucepan. Place dipped balls on the baking sheet. Let stand or chill about 30 minutes or until set. Lightly drizzle with the remaining melted chocolate mixture.
